PARWAL BOATS WITH LOTS OF VEGGIES STUFFINGS

Parwal is a vegetable , which is cooked in my house for both lunch and dinner. For lunch it is always a dry curry , but whenever I make it for dinner , I try to make it with variations .
Today it is
PARWAL BOATS WITH LOTS OF VEGGIE STUFFING .
When we think of stuffing , mostly we end up with the traditional way . Else the recipe handed over generation after generation is being followed ..
I remember when I was young , I took the recipe for “ Stuffed Bittergourd” from someone , Tried a couple of times then stopped . The reason , too much time and effort was needed . Not only this , the recipe was asking to tie the halves of the bitter gourd with a string and , while consuming , it used to turn out messy .
Am a person who never hesitates to do any experiment with food . So once I decided to go , a little out of the way . With the cooking experience of so many decades I decided the ingredients of the stuffing on my own . Shall be writing about them from time to time . My vegetable stuffings mostly contain Boiled Potatoes , Pumpkin , Louki , Carrot , French beans , Cabbage and Peas. Sometimes I even make stuffings using Chana Dal , and Sweet corn etc .Whatever is available in the fridge at that time.
The most important thing about any stuffing is to stay intact . This is possible when some “ Binding Agent “ is mixed with the veggies . My trusted “ Binding Agent “ is “ Roasted Gram Flour “
Shall be giving the details below
Today My stuffing has , Louki , Boiled Potatoes , Carrots , Tomatoes , Onions , Green chillies and ginger
Ingredients
400 gms Parwal– Just to scrape out gently the outer part of it and to cut them into halves , lengthwise

For Stuffing
6 inches long a Louki piece
2 medium size Boiled potatoes
2 Medium sized Carrots
2Medium sized onions
2 Medium sized Tomatoes
1 long green chilly ,
1 inch piece of ginger
1 Tablespoon Garam Masala
1 Tablespoon Coriander powder
1 Teaspoon Jeera Powder
2 -3 Tablespoon of Cooking oil
1and ½ Teaspoon of Ghee
1 Teaspoon Jeera
2 Bay leaves
2 Tablespoon of Besan / Gram flour

Salt – As per requirement
½ Teaspoon of Haldi powder
2 Tablespoon of finely chopped .Coriander leaves
Wash and cut both the edges of Parwal . Gently scrape the outer part and cut each one into halves . From each half remove the seed part . Now you have “ Parwal Boats .
In a small bowl mix half a Teaspoon of Salt , half a teaspoon of Turmeric Powder and 1 tablespoon of oil .Mix it with the halves in such a way that each and every half get coated very well and start looking yellow .Put them in a Microwavable bowl and cook it with the cover for 30- 40 minutes .
While Parwals are getting cooked, start to prepare the stuffing: Grate the pieces of Louki , Carrots and Boiled Potatoes . Chop the green chilly , ginger , onions and tomatoes finely .
Heat a frying pan .Add ½ Teaspoon of Ghee . Reduce the heat and add the Besan and start roasting it in the low medium heat . Keep stirring constantly , to avoid burning it. Once it turns golden , put off the flame . Shift the besan to a plate . Again heat the frying pan. Put the oil and the remaining ghee together .Once heated , add the bay leaves first , then add Jeera. As it starts spluttering add chopped onions , chillies and ginger . Stir it well. As the onion will turn translucent , add the chopped tomatoes and stir . As this mixture starts leaving the oil , add salt and Turmeric powder . Next add Garam Masala , Coriander Powder and Jeera Powder and stir it again . Now add the grated vegetables . Sprinkle little water . Bring the flame to completely to the lowest . Cover it and cook it for 10- 12 minutes. Once you find that they are cooked completely add the roasted gram flour and mix thoroughly .Put off the flame . The stuffing is ready . Allow it to cool .


Once Parwals are done , and if they are cool enough to handle . start to stuff them . You will notice that the stuffing is easily rollable . Discard the Bay leaves and stuff all the “ Parwal Boats “.

Place them again in the Microwavable bowls . Brush all the pieces with oil and cook them without cover for 15 minutes in medium heat

If you like , you may add Paneer , Pumpkin , or cabbage too to your stuffing . I had just those three vegetables only , so I had to manage !!
