STUFFED CAPSICUMS

I regularly prepare “ Stuffed Capsicums”.

 Here I would like to mention that , most of the time I cut the Capsicums into halves , remove the seeds  and stuff them.

This is because many times , the size of the Capsicum  happens to be quite big .

With the halves , I feel that the size  can be managed .

One more thing I would like to state here is that , the stuffings that are prepared by me are mostly with the vegetables only. That too , the  stock of the veggies , that I have in my fridge .,

Yes ! There are a few vegetables , which I get to use regularly  and am not very particular about one single  vegetable.

For today’s  Stuffings I had the following vegetables 

1 piece of Pumpkin

1 piece of Lauki 

2 long Carrots 

1 fistful of French Beans 

1 Boiled Potato .

I had six medium Capsicums 

FOR TEMPERING

2 medium sized Onions –Very finely chopped 

3 medium Tomatoes –Very finely chopped 

2 medium size Green Chillies – Very finely chopped 

1 inch piece of Ginger -Grated 

2 Tablespoons of Roasted Gram Flour / Besan 

1 Tablespoon of Coriander leaves – Finely chopped 

1 Teaspoon of Turmeric Powder 

Salt as per requirement 

 3 -4 Tablespoon of Cooking oil 

Spices 

1 Teaspoon of Jeera 

1 Bay leaf 

2 Teaspoon of Garam Masala 

METHOD

Cut the Capsicums from the middle into halves.

The bottom  half normally , would not have any seeds ,  so let them be intact.

From each of the upper half remove the seeds and the thick middle part as well.

Now all the halves of the Capsicum would look like small bowls .

The Nature of Capsicum is  such that it can not be cooked in water , but always need to be cooked with oil only 

In a small bowl mix 1 Tablespoon of oil , little salt and ½ Teaspoon of Turmeric Powder .

Coat each and every half , both inside and outside .

Place all the coated ones in a microwavable bowl . 

Cover and cook them for 25- 30 minutes on medium heat .

This is to ensure that every piece gets cooked well.

While Capsicum is getting cooked , you may start to prepare the stuffing.

Heat a frying pan.

Pour 2 Tablespoons of oil into it .

When it is heated add the Bay leaf and Jeera to it .

When Jeera starts fluttering , add one by one , chopped onions , chopped green chillies and grated ginger .

Stir it well. 

When the onions turn  translucent  add chopped Tomatoes to it and stir .

Add the salt , the remaining Turmeric Powder  and Garam Masala  and stir .

Once the oil starts separating  add all the grated vegetables , except , the boiled potato 

Sprinkle a handful of water and cover and cook it at a lower medium heat , till all the vegetables become soft .

Add the grated Potato and stir it .

Add Roasted Gram Flour and mix it thoroughly .

Put off the flame .

Add the chopped Coriander leaves and mix it well .

Your stuffing is ready ,

Allow it to cool down .

Discard the Bay leaf .

Start to stuff the cooked Capsicum  pieces .

Once completed , put two -three drops of oil on each stuffed piece and cook it again in the microwave  for 6- 8  minutes in medium 

Serve it as a snack , or a starter.
