
THE TAMILIAN VERSION OF ” BESAN KE LADDOO” –MAA LADOO
MAA LAADOO
“ Laddo” is a very popular sweet item across the country .
Each state / Region has its own variation..
“ Boondi Ke Ladoo , Motichoor ke Ladoo” , and “ Besan Ke Ladoo” are the popular ones .
As such we Tamilians prepare “ Boondi Ladoo” and “ Rava Ladoo”.
Another popular one is “ Maa Ladoo”, which is very much similar to “ Besan ke Ladoo”.
The only difference is that , in place of Besan / Gram flour , “ Fried Gram Dal ( Pottu Kadali ) is used .
INGREDIENTS
1 cup–Fried Gram Dal ( To be roasted )
1 cup Sugar ( To be powdered )
1 bowl of Ghee
12-15 Cashew nuts ( Cut into small pieces )
12-15 Raisins ( Cut into small pieces)
1 Teaspoon of Cardamom Powder.
METHOD
Dry roast the fried Gram Dal , till it turns golden .
Once it is cool , powder it
Powder the Sugar .
Here I would like to mention something .

There is no exact measurement of Ghee to be taken .
The reason is -All the ingredients are dry and ,Ghee is the one which would bind them together .
Ghee should be added in such a way that , Ladoos should be in the perfect “ Spherical shape” without getting collapsed or crumbled
So , in a heating pan add an adequate amount of Ghee .
Once it is hot enough , reduce the flame .
Add the cashew pieces first and stil .

After a few seconds add the raisins pieces .
The reason for this is , Raisins tend to burn , if you put that along with Cashew nuts .
Once Cashew nuts start turning golden and Raisins start becoming fluffy , put off the flame .
Take a wide Paraat or Besin and put the powdered Sugar and powdered Gram dal .
Add the fried Cashews and Raisins to the mixture .
Add the Cardamom Powder to it and mix thoroughly .
Start making the “ Ladoos”

Take a fistful of the mixture and close the fist very tightly till the mixture turns into a lump .
Here you must be able to judge whether the mixture is ready to become a “ Ladoo” or not .
What I mean to say is ,if the lump is still crumbling or getting collapsed , it means , some more Ghee is required .

Heat some more Ghee and add to the mixture .
Try again , with a fistful of mixture .
If this time , the lump stays intact without getting collapsed or getting crumbled , means , it can take up the shape of a “Ladoo”.
Start to give the lump a spherical shape .
Once it gets the shape , place it on the middle of the palm and use the other middle of the palm to roll it very gently all over .
You will notice that the surface is completely levelled and it also started to get a sheen .
This way , finish making all the “ Maa Ladoos”.
With 1 cup of Fried Gram Dal and the ingredients , you may get 12 -15 in nos , of “ MAA LADOOS” of a moderate size .
I had taken 2 cups , so could manage to get 30 pieces .
